Vin Jaune is one of the most unusual wines in the world: Savagnin aged for at least six years and three months in barrels not topped up, developing under a flor yeast veil similar to fino Sherry. En Spois is Tissot's finest single-vineyard Vin Jaune from south-facing Triassic marl soils. Deep gold. Walnut, curry, dried citrus peel and beeswax. The palate is taut and saline with remarkable tension and a finish that goes on for what feels like minutes.
