Deep in the mountains of Chiapas, outside of San Cristobal de las Casas, is the pueblito of Cruzton. Tzotzil typically made from a combination of wheat, corn and cane, this is distillate is produced in stainless steel drum barrels under high heat using wild yeast from the air during wood-vat fermentation. Domingo and his sons are 5th/6th generation poxeros, utilizing the available mountain spring waters and fertile soils of the valley to grow their raw materials and produce this rich distillate.
