Making of (2025): Grapes are hand-picked and direct-pressed as whole bunches in the family’s old
screw press, with juice sent to a mix of stainless steel tanks, fiberglass, and large oak barrels for natural co-fermentation and aging. The wine remains on gross lees until bottling in April 2026, unfined, unfiltered, with a touch of SO2 added at bottling.
