Notes: Notre Terre is a new side project from Brunnhilde Claux, already in charge of the Domaine de Courbissac, in the heart of the Minervois. Brunnhilde got her start at Domaine Gauby, where she learned how to handle the natural exuberance of grapes grown in the generous Mediterranean climate. 18 days of whole bunch fermentation with very slow pressing for the whites and a few months in concrete eggs. Biodynamic, bright and easy, and nicely balanced with round sunny notes. A touch of salt and savoriness, pleasant crunchy texture throughout.
