Slow brewed from locally grown Abruzzi Rye and Organic Soybeans. Rye is lightly roasted to create a subtle aromatic caramelization and then combined with freshly steamed organic soybeans to grow shoyu koji. The shoyu koji is sourced from Japan and has been specially developed for its high level of protein to amino conversion, depth of flavor and rich color. This barrel aged soy sauce is a favorite of home and professional cooks because they enjoy how it’s complexity and deep umami flavor contributes so much to their dishes.
